    JOB OVERVIEW

    Summary of Position
    Take full responsibility for the day-to-day food operation Bakery in line with Brunch &
    Cake vision, business plan, company guidelines, quality standards, Food safety and
    Health & Safety policies. The Head Pastry chef assumes responsibility for delivering high
    quality pastry goods according to company Food Bible and recipes.
    Duties and responsibilities
    ü Promote culture and values of Brunch and Cake
    ü Ensure that Pastry Staff are trained and ready to run the operation smoothly,
    establish strong leadership for the team
    ü Control inventories across food, consumables and OSNE related to Pastry
    ü Enforce established processes and procedures within the team
    ü Ensure Pastry operation is meeting all Food and Health and Safety standards at
    all time and is compliant with relevant regulatory requirements
    ü Maintain kitchen area clean and safe
    ü Ensure and the equipment is in good operating order at all times, address any
    issues in urgent matter
    ü Monitor on daily basis the pastry operation to ensure high quality product is
    delivered to each and every customer
    ü Ensure that all pastry goods are prepped and served according to Brunch &
    Cake food bible and specs
    ü Ensure only approved suppliers and products are used at all times
    ü Strictly monitor pastry ordering procedure
    ü Conduct regular team training and daily briefings to maintain high standards
    ü Schedule staff shifts to ensure sufficient workforce for operation
    ü Suggest and implement changes in order to improve operation if needed
    ü Carry out interviews, staff probationary reviews, appraisals and instant
    feedbacks according to company policies
    ü Stay up to date on industry trends
    ü Perform well under pressure and in busy environment
    ü Show teamwork and support colleagues
    ü Carry out any other task outside of direct duties if needed
    ü Follow company grooming and hygiene standards
    ü Follow Food safety and Health and Safety procedures
    ü Adhere to local legislation rules and regulations
    ü Attend all the training required
    ü Attends all scheduled meetings and brings suggestions for business
    improvement
