    JOB OVERVIEW

    Finance and Revenue:
    o Control expenses/daily sales and initiate strategies to increase revenues and decrease expenses.
    o Be the main coordinator for preparing the yearly budget with the coordination of Head Chef and support of Operations Manager.
    o Coordinate with the Head Chef and the Cost Controller on menu engineering every 6 months and present proposal to Operations Manager.
    o Propose new projects to Operations Manager to improve the business.
    Customer Care:
    o Ensure a proper development of the customer database in close coordination with the Maitre D’hôtel Reservation, Hostesses as per Sales and Marketing guideline.
    Food Quality and bar:
    o Conduct a weekly food tasting with Operations Manager for few menu items (picked randomly) to ensure consistency and quality of the food.
    o Coordinate with the Food Safety Coordinator regarding the cleanliness of the canteen food, hygiene and sanitation.
    Maintenance:
    o Maintain company’s properties in good condition.
    o Coordinate and follow up with maintenance department on any maintenance project taking place in the restaurant.
    o Maintain squirrel system (updates, CDR & Maitre D’hôtel’s accesses, reports, link to printers…) and communicate any issue to the Finance department.
    o Handle the maintenance schedule, agenda and perform regular follow ups to ensure execution of tasks.
    Task distribution and committees:
    o Control daily tasks done by the service staff, and help them improving their skills.
    o Check and approve on dining employees’ schedules prepared by Assistant Restaurant Manager and control distribution of tasks on daily basis.
    o Check, approve and spot check on all restaurant’s checklists (Opening, closing, valet parking, maintenance, arguileh, WC, security…) through conducting manager’s walk in the restaurant minimum twice a day.
    Reporting duties and communication:
    o Conduct a daily management briefing with Assistant Manager and Maitre D’hôtel available on the shift to discuss any issue and communicate changes, new policies/procedures… to ensure management are working on the same page and reduce miscommunication.
    o Control void reports, breakage, theft and waste reports.
